As fiber surges in popularity, a childhood Italian Favorite is in my rotation. Pasta lenticchie. I exchanged the pasta for potato for a much thicker stew like meal. Baby spinach is continually added before, during and after cooking. Wonder if @wthballs @threeinningfan @delspacefranco enjoyed this peasant soup as much as I did as a kid.
