Looking (at) Nice as F*ck tonight

On a real one today

Potato crusted halibut, parsnip puree with grated apples, and mango habanero salsa.

Battling a cold dinner - salmon poached in fennel, tomato, dill and ginger broth (spooned over the fish ) with daikon cooked as the broth was made and apples poached with the salmon . I’ve been getting into zero waste so the broth was remnant cuts and salmon skin crisped.

Went with a less beige dish tonight - pork tenderloin with a mango habanero salsa, radicchio, fennel and apples cooked in the baking pan after the sear, and some blackened carrot fries

Little take on dirty rice
