In Mexico, "Pastel de Carne" literally translates to "Meat Cake" or "Meat Pie," but it is actually our traditional, home-style version of a Meatloaf! It is a very comforting dish, usually made by moms and grandmas, and it has a fun surprise inside.
Ingredients:
The Meat: 500g beef mince and 500g pork mince (the mix keeps it juicy).
The Mix-ins:
1/2 white onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
2 raw eggs (lightly beaten, to bind the mixture)
1 large carrot, finely diced (you can also add a handful of peas)
Salt and black pepper to taste
The Surprise Center: 3 or 4 hard-boiled eggs, peeled.
The Topping:
1/2 cup of ketchup or tomato passata (puree)
4 to 6 bacon rashers
Instructions:
Preheat your oven: Set it to 180°C.
Mix the base: In a large bowl, combine the beef and pork mince, chopped onion, garlic, diced carrots, breadcrumbs, and the two raw eggs. Season generously with salt and pepper. Mix everything together with your hands until well combined, but try not to over-mix so the meat stays tender.
Assemble the loaf: Take a loaf tin (or a baking dish) and press about half of the meat mixture firmly into the bottom.
The surprise: Take your peeled hard-boiled eggs and lay them end-to-end in a straight line right down the middle of the meat.
Cover it up: Pack the rest of the meat mixture on top and around the sides, sealing the hard-boiled eggs completely inside. Press gently to shape it nicely and remove any air pockets.
The glaze and bacon: Spread the ketchup or tomato puree evenly over the top of the meatloaf. Finally, lay the bacon rashers across the top to cover it. As it bakes, the bacon fat will melt down into the meat, giving it an amazing flavor.
Bake: Place it in the oven and bake for about 60 to 75 minutes. You'll know it's done when the meat is cooked through, the juices run clear, and the bacon on top is nice and crispy.
Serve: Let it rest in the tin for about 10 to 15 minutes before slicing. This helps it hold its shape! When you cut into it, every slice will have a beautiful piece of the hard-boiled egg in the center. We usually serve this with a side of creamy mashed potatoes or a fresh salad.

Starting to see a lot of batshit and insane tweets from Japanese twitter. It will be a terrible shame if one of the few countries left with real aura in the global commons loses it all to Grok auto-translate.
As someone from an English-tweeting country, I urge all well meaning Japanese people to get Musk and Nikita to remove auto-translate from their tweets. You want to be kanjimaxxing. There is no upside to having your tweets read by the whole world.
We are all insane here so the way to prosper and keep your aura is to hide your crazy from the rest of the world.
