Jiffy corn muffin mix is built around lard. Half the list is there to keep the lard from going bad. The box reads wheat flour, degermed yellow corn meal, sugar, lard, then under 2% of baking soda, sodium acid pyrophosphate, salt, monocalcium phosphate and the enrichment vitamins. The lard gets its own parentheses, hydrogenated lard with BHT and citric acid as preservatives. Hydrogenating it is what keeps it solid in a paper box on a warm shelf instead of soaking through the cardboard. BHT is there because fat goes rancid, and BHT stops that for a long time. The corn meal is degermed for the same reason. The germ is where the corn keeps its oil, oil goes rancid, so the mill takes it out and the box can sit in your pantry for months. The two phosphates are what make it rise. Monocalcium phosphate reacts with the baking soda the second the milk hits the bowl. Sodium acid pyrophosphate doesn't do anything until it feels the oven, which is why you get a second rise after the batter's already in the pan. Chelsea Milling has made it this way in Michigan since 1930, and it's still one of the cheapest boxes in the aisle. If you need the vegetarian version, it's the green box, with palm and soybean shortening in place of the lard, and the blue box isn't it.

Your can of pumpkin puree is squash. Libby's grows and cans a tan, oblong variety from the butternut family and labels it 100% pure pumpkin. That's legal, and FDA has said so in writing since 1938. Their compliance guide tells canners the agency will not take action against the word pumpkin on anything made from golden fleshed, sweet squash. Pumpkin has no real botanical definition and it's a word for certain types of squash. The variety is called Dickinson, the same species as butternut, and Libby's grows it by the thousands of acres around its cannery in Morton, Illinois. Libby's makes about 85% of the canned pumpkin in the country and doesn't hide any of this. Nestle's own harvest release names the variety and says outright that pumpkin is a form of squash.
