We also found that some industrial processes and environmental conditions significantly influence ARG presence and spread.
This opens doors to interventions in food systems to curb AMR risk.
~40% of ARGs were linked to mobile genetic elements—a major concern due to their potential for horizontal gene transfer across bacteria.
This can accelerate the spread of resistance.
Many ARGs were found in clinically relevant ESKAPEE bacteria, such as E. coli, S. aureus or K. pneumoniae
These are major drivers of difficult-to-treat infections in hospitals.

Key findings:
• >70% of known ARGs are present in the food production chain
• Most prevalent: genes conferring resistance to tetracyclines, beta-lactams, aminoglycosides, macrolides

We analyzed nearly 2,000 samples from raw foods (milk, meat, fish, cheese, veg) and food processing environments across 100+ European companies.
Using whole metagenome sequencing, we looked for antibiotic resistance genes (ARGs).

Excited to share our new study published in Nature Microbiology!
We explored the resistome of foods and food production environments using metagenomics.
This work is part of the EU-funded MASTER project.

Very proud of Coral Barcenilla, who yesterday received an award of our @unileon to the best PhD Thesis in the field of Health Sciences. Very much deserved and a sign of her bright future!
Today we celebrated a workshop on AMR at the University of Cordoba. I presented the work done in the last years at @NEWTEC_ULe on food chain resistome dynamics. Many other interesting talks on AMR and One Health. Thanks to the organizers for the invitation!
Today we hosted at @FacVetLeon an event for the AMR awareness week. With fantastic talks by @Azumora3 on One Health for fighting AMR; @mcarmen_collado on microbiome and resistome transmission in early life; and @jaegc on the role of integrons in AMR spread.
Other researchers from @NEWTEC_ULe, including @JCobodiaz and @angeeelfr, have also presented results on microbiome and resistome analyses on meat products and produce process water, and on the use of plasma technologies to tackle biofilms of Listeria @SEMicrobiologia
Thanks to the organisers of the XXIII Congreso Nacional de Microbiología de los Alimentos for their invitation to present our latest outcomes from MASTER on the analysis of the resistome of foods and associated processing environments @SEMicrobiologia @JCobodiaz @narmquijada
It has been great to participate in @FoodMicro2024 in a round table organised by @EFSA_EU presenting the BIOHAZ scientific opinion on persistence of bacteria in processing environments. Fantastic contribution by all round table participants and great feedback from the audience!
