Wolverine's healing factor could allow either half to regenerate the missing organs. It's even possible that both halves could become separate Wolverines.
My verdict: Two Logans are theoretically possible, but it ultimately depends on the comic-book writer.

The show still sells Matt as peak human street-level, but he keeps casually dismantling people in kitchens like this while wearing a dress shirt.
One radar ping and the fight is over. Either “street level” stopped meaning anything the second the writers needed him to clear a room solo, or Daredevil has been operating as a low-tier enhanced the whole time and the “just a man” framing is just branding.
