Sancho Pistola’s, the Mexican bar & restaurant at 19 W. Girard Ave. in Fishtown, has permanently closed after 12 years in business. The closure comes less than two months after its sister bar, Jose Pistola’s, shut down in Center City. The owners previously cited ongoing financial struggles since the pandemic and the loss of chef & business partner Adán Trinidad in 2021 as challenges for their restaurants.
