Did some more data digging around the Football Manager match engine, by no means a perfect science, but tell me if this makes sense to you...
High Intensity Sprints
FM24 - 114 per game
FM26 - 112 per game
FM27 - 95.5 per game
Tackles Won
FM24 - 19.84 per game
FM26 - 10.47 per game
FM27 - 6.92 per game
So I'd say whilst there has been a shift in football generally away from Gengenpressing, it's probably been 'nerfed' too hard, which likely affects all pressing tactics.
There's also a shift in say completed passes for example
FM24 - 450 per match
FM26 - 463 per match
FM27 - 499 per match
So teams are holding the pass for longer generally.

5: Joao Neves
6: Michael Olise
7: Harry Kane
