If Holly (Ilex aquifolium) finds its leaves are being nibbled by deer, it switches genes on to make them spiky when they regrow. So on taller Holly trees, the upper leaves (which are out of reach) have smooth edges, while the lower leaves are prickly 🤙

The only reason to make larger gougeres is so you end up eating fewer in number when you mow the entire batch. Lifting weights occasionally will make “vigorous stirring” a pleasant task and your puffs will rise more… @davidlebovitz davidlebovitz.com/gougeres-f…

Help! I’ve been told that using my @OXO kitchen scale twice/day for 30 secs is “excessive” and warrants the use of four batteries that drain after 2 months. What do you recipe makers and other excessive scale-uses use? Any good thing to say about the rechargeable scales?
