One other factor to remember: Truffles weren't always as expensive as they are now. A lot of canonical recipes from Escoffier, etc., like salade demi-deuil, relied on quantities of truffles that couldn't be used today, unless you planned to sell a $1,000 salad.

Today, we are mourning the loss of loved ones, yet again, as 10 people were killed at the hands of a gunman while shopping at a grocery store. We must refuse to accept this as our new normal. Congress must pass common-sense gun laws. We need action, not just thoughts & prayers.
