Almost all pork that I see in my neighborhood stores has been injected with up to 12% of water, salt, and sodium phosphate. This is common. It is done for two reasons. First of all, it increases the profit margin by 12%, secondly it makes the meat more juicy and more flavorful. That’s a good idea because there are still a lot of people that don’t use a meat thermometer and it is really easy to overcook pork and turn it in a cardboard. There’s nothing dangerous about it, and it must be plainly stated on the label so it is not nefarious.
The pork chops at the meat counter were injected with solution. The tray reads up to 12% solution of water, salt and sodium phosphate. It's not just the store brand. Hormel Always Tender tenderloin is up to 12% of water, potassium lactate, sodium phosphates, salt and sodium diacetate, and a Kroger cook-in-bag tenderloin is up to 15% plus a rub. At the plant the loins go through a bank of needles that pump the brine in, then into a tumbler that spreads it through the muscle. The phosphate raises the pH of the meat so the proteins grab water and hold it, and the salt helps them hold more. The pork comes out heavier than it went in, it won't dry out on a grill, and the water expands margin. The lactate and the diacetate are there for shelf life. Check the sodium for the tell. A plain tenderloin is about 60 mg in 4 oz, the 12% ones run 290 to 320, and the 15% one with the rub is 710. Since 2016 the solution line has to be part of the product name on the front of the tray, at least a third the size of the name, and the word enhanced isn't allowed.

I need your help making a list of nominees for the Nobel Prize who deserve it more than the guys who got it, and you can't say Trump. I'll start: Whoever invented cream cheese with smoked salmon in it.

Zombie blood is real, well, sort of. Our homemade ketchup recipe is thick, dark, sweet, tangy, and just weird enough to deserve the name. And here is the fun part: ketchup did not even start out as tomato sauce. Early versions were more like fish sauce, mushroom sauce, or fermented condiments. Tomatoes showed up much later. So for Halloween, skip the fake blood and make something you can actually put on fries, burgers, sandwiches, or meatloaf. Just not hot dogs. (We know, that's controversial) We have standards even if you don't LOL. 😜 amazingribs.com/tested-recip…

Here is my Chanterelles V2.0 à la @meathead , meaning I cooked them exactly the same but the finishing wine was Amontillado medium dry not Sake. Had a more "fruity" taste to my palate. Next step, V 3.0 with a super dry Fino or Manzanilla, then I'll tell you which is my favorite.

Wow. Wow. I love the idea of using Amontillado and what a great picture. I have to try it.

A whole chicken. A can of beer. One of BBQ's most popular tricks. But does beer can chicken actually work? I've dug into the science behind this backyard favorite, and the results might surprise you. #AmazingRibs #MeatheadMyths #BeerCanChicken

Last night‘s game was really fun because New England is a good team and they almost caught the bears. But oh my goodness, that Chicago offense is talented and well coached, and even though the defense is not that talented, they are well coached. I can’t wait to see how far they go in the postseason.

A Chicago Dog makes everything around it beautiful.
The presentation isn’t pretty and i don’t have all the ingredients but that’s as close to a Chicago dog i got at home. With some waffle fries, peas, and cornbread. That’s what’s up. What are you having? - cream

Don’t scream. It’s not raw. It’s the smoke ring, and it's frightened dinner guests for decades. Here’s what’s actually happening: gases from your fire react with myoglobin, a pink protein in the meat, and lock that color in near the surface. Usually about an eighth of an inch deep. Plot twist: you don’t even need smoke to make one. Even scarier for some pitmasters? It adds zero flavor. It’s just there to look good. So when Uncle Gary pushes his plate away, tell him to check the center. Then eat his slice. amazingribs.com/more-techniq… #AmazingRibsDotCom #Halloween #SmokeRing #BBQScience #Brisket #MeatScience #SmokingMeat #BBQTips

#VamosOsos

Weber just gave the kettle an upgrade! The classic 22-inch Weber kettle has always been beautifully simple. But now Weber has added WiFi, a PID controller, a fan, meat probes, app monitoring, and the ability to hold low-and-slow temps without you babysitting the vents all day. Dave put the new Weber Kettle Smart Ring through real cooks: fish, burgers, pulled pork, and reverse-seared steak, to see what it can actually do. Smoking and roasting? This thing gets interesting fast. For a screaming-hot sear? There are a few catches, especially because the Ring raises the cooking grate much farther from the coals. So is this the gadget that turns your old kettle into a smarter smoker?  Read the full review to find out! amazingribs.com/ratings_revi… #AmazingRibsDotCom #WeberKettle #WeberSmartRing #CharcoalGrilling #BBQGear #SmokingMeat #GrillReview #BBQTech #BackyardBBQ #Pitmaster

So many of these Asian street food dishes, look delicious and wildly creative, the kind of craziness you might find at an American carnival. Not using the same ingredients of course, just their wackiness.
That egg swirl is oddly satisfying 😍 Would you try this Japanese comfort food? 🇯🇵🔥
