It's sweeter because some of its starch converts into sugar as it ripens. Both can be part of a healthy diet. Try boiling them and pairing them with beans, eggs, fish or vegetables for a balanced meal. Remember: plantain is nutritious, but portion size matters, especially if you're managing diabetes.
