Thiamine is a vitamin commonly found in grains. Deficiency of thiamine has been linked to neurological problems and cognitive deficits. This is because of thiamine-dependent enzymes play integral roles in the metabolism of glucose in the brain. @UofGFoodProf #Gibson #Food2150

Thiamine deficiency causes cell death in the brain. Loss of neurons and activation of other cell types involve inflammation and oxidative stress. Which are also observed in Alzheimer patients. Thus, an increase in thiamine may be helpful for patients.#Gibson #food2150

Insufficient levels of thiamine have been shown to cause neurological problems similar to those caused by AD, also thiamine dependant processes are reduced in people with AD. Could thiamine be the cause of Alzheimer’s disease (AD) #Gibson @JillianLutchman @UofGFoodProf #food2150

@UofGFoodProf The future diet is the plant-based diet. Government would put in more money to food Scientists to develop similar-textured meat which we are still striving for right now because of the environmental concerns #Food2150 #Assignment #Jones

Developing non-animal proteins is currently a growing industry. Further developments must be made to get the correct muscle like texture. The complicated protein composition from legumes & seeds has made it challenging to produce meat-analogs. #Food2150 @UofGFoodProf #Jones

Thiamine deficiency is linked to Korsakoff syndrome(KS) which exhibits symptoms of memory defects and disorientation. The cognitive changes in KS are similar to those in Alzheimer’s disease(AD). Adding thiamine can reverse KD symptoms, could this work for AD? #Gibson #Food2150

Interesting how there is no significant relationship correlation between glycemic index and dietary fibre. This is most likely due to how wheat fibre has a little effect on blood glucose, and how many high fibre foods are wheat products. #Food2150 #Assignment #Jenkins

A decrease in thiamine levels can lead to a reduction in glucose metabolism which creates cognitive deficits associated with Alzheimer’s and drives it’s abnormalities. Can thiamine restoration reverse the affects of Alzheimer’s disease? @UofGFoodProf #food2150 #Gibson

Feeling sick? Your body may be preventing you from being poisoned. The bitter taste of toxins trigger responses to prevent you from ingesting them. If you do ingest them, your stomach doesn't contract normally, it shifts to a chaotic pattern. @UofGFoodProf #Breslin

Over the years the food industry has explored and made new advances in non-animal proteins as a possible alternative for traditional meat. A famous technique for achieving this is high pressure processing, a technique we talked about in class! @UofGFoodProf #Jones

@UofGFoodProf Lactoferrin is a protein from milk inhibiting the growth of gram positive/negative bacteria, yeast, etc. Although the peptides show physiological effects the role of milk protein derived peptides in relation to functional foods has been wondered. #Nagpal #Food2150

Obsessed with protein? Want it from non-animal sources? The essential nutrient that contributes to body functionality can be found in insects. A progressive study in 2013 shows and validates that proteins can be extracted from five edible insects. #Jones #food2150 @UofGFoodProf

The ketogenic diet is used as a treatment for drug-resistant childhood epilepsy. Did you know that high fat and restricted carbohydrate content of the diet mimics the biochemical response to starvation. Thus, ketone bodies become the main fuel for the brain. #Assignment #Neal

Reducing saturated fat intake over two years reduced cardiovascular events by 17% on average. Replacing saturated fats with polyunsaturated fats in adults' diets showed a decrease in risk for cardiovascular diseases. @UofGFoodProf #Food2150 #Assignment #Hooper

A key aspect of a protein’s functionality is the structural reactions during heating and drying -- apparent in the making of angel food cake. The whey protein foam is exchanged for egg white foam because it can stabilize the foam during baking @UofGFoodProf #FOOD2150 #Foegeding
